Zubereitung

Backofen auf 180° Ober-/Unterhitze vorheizen.

Für die Streusel und den Boden Mehl, Butter, 180 g Zucker, Vanillinzucker und eine Prise Salz mit den Händen verkneten. 3/4 der Streusel in eine gefettete Springform drücken und einen etwa 2 cm hohen Rand nach oben formen.
Mandeln unter das restliche 1/4 Streusel mischen.
Den Boden im unteren Drittel des Backofens etwa 15 Minuten hellbraun vorbacken und kurz abkühlen lassen.

Erdbeeren putzen und je nach Größe vierteln (bzw. achteln).
Rhabarber abtropfen lassen, kurz ausdrücken und ggf. den Saft auffangen.
Erdbeeren und Rhabarber miteinander vermengen und großzügig auf den Boden geben.
Anschließend die Streusel über den Kuchen geben und im unteren Drittel des Ofens weitere 35-40 Minuten backen.
In der Form abkühlen lassen.

5) Optional: Schlagsahne, ein Päckchen Sahnesteif und den aufgefangenen Rhabarbersaft steif schlagen und gemeinsam mit dem Kuchen servieren.
