Die Kürbisfamilie ist groß. Es gibt über 800 Sorten, von denen die allermeisten zum Verzehr geeignet sind. Kein Wunder also, dass man mit Kürbissen in der Küche von der Suppe bis zur Nachspeise so ziemlich alles herstellen kann. Die süßliche Note der orange-gelben Genossen kommt gerade in Backwaren besonders gut zur Geltung.

Wenn man sich die oft gigantisch-großen Kürbisse anschaut und eine Himbeere daneben hält, mag man es kaum glauben, aber botanisch gesehen ist der Kürbis ein Beerengewächs. Und zwar ein sehr nahrhaftes: Kürbisse stecken voller Ballaststoffe. Auch elementare Spurenelemente, Vitamine und das für die Augen so wichtige Karotin sind enthalten. Kaum ein Gemüse ist so reich an wertvollen Inhaltstoffen wie die größte Beere der Welt. Gleichzeitig sind Kürbisse fett- und kalorienarm. Ein Grund mehr, den Backofen mit dem leckeren Fruchtfleisch zu befüllen.

Kürbisse – An Vielseitigkeit nicht zu überbieten

In herzhaften Gemüsekuchen ist der Kürbis der Star unter den Zutaten. Egal, ob in Kombination mit der artverwandten Zucchini oder Küchenklassikern wie Tomaten, Lauch und Möhre – der Kürbis peppt jedes Gemüsegericht auf. Wir können nicht genug bekommen von den leckeren herzhaften Kürbisrezepten, wie z. B. Kürbisstrudel oder Kürbisquiche. Speziell Kombinationen mit Schinken und Käse – Ziegenkäse beispielsweise – bringen das außergewöhnliche Aroma von Kürbissen zum Vorschein. Oder probieren Sie doch einmal eine Kürbisquiche mit Rotbarschfilet und Pinienkernen. Mit einem Gläschen Weißwein dazu können Sie diese köstliche Quiche durchaus Gästen servieren. Aber auch ganz alleine macht der Kürbis eine gute Figur, zum Beispiel als Kürbisbrot.

Genauso gut lassen sich süße Teigwaren herstellen. Wenn Sie schon beim Brot sind, dann backen Sie doch einen Kürbis-Stuten. Feste Kuchen wie Muffins oder Rührkuchen werden durch das Gemüse schön saftig. Genießen Sie diesen leckeren Kürbis-Schokoladen-Kuchen, diesen nussigen Kürbiskuchen oder einmal einen ausgefallenen Grießkuchen mit Kürbisfüllung. Selbst das Traditionsgebäck Stollen kann mit Kürbisfleisch verfeinert werden. Ein großes Plus für alle, die Zitronat nicht mögen. Als Backzutat muss das Fruchtfleisch allerdings vorher gekocht und püriert werden. Dank des hohen Feuchtigkeitsgehalts können Sie den Fettanteil im Kuchenrezept dann getrost ein wenig verringern.
