Zubereitung

Ohne Neujahrsbrezel kommt im Schwäbischen und in Baden niemand ins neue Jahr. Die großen Brezeln aus Hefeteig sind ein willkommenes Neujahrsfrühstück.

Aus der Hefe, einem TL Zucker und einem Teil der warmen Milch bereitet man einen Vorteig zu, der mindestens 10 Minuten zum Gehen stehen gelassen wird. Das Mehl wird in eine Schüssel gegeben und eine Mulde in die Mitte gedrückt, das Salz und der restliche Zucker auf dem Muldenrand verteilt. Die lauwarme Milch wird mit der Butter gemischt. Nun wird der Vorteig in die Mehlmulde gegeben und alles zusammen zu einem Hefeteig geknetet. Auch das Gemisch aus Milch und Butter wird dabei hinzugefügt.
Alternativ kann man die Neujahrsbrezeln auch mit Trockenhefe herstellen und alle Zutaten direkt zusammen geben, ohne einen Vorteig herzustellen.

Wenn der Hefeteig zu einem geschmeidigen Klumpen geworden ist, muss er abermals mit einem Küchentuch abgedeckt gehen, bis er etwa das doppelte Volumen erreicht hat. Das dauert je nach Standort etwa eine halbe bis eine Dreiviertelstunde.

Danach wird der Hefeteig abermals geknetet und in die Portionen für die einzelnen Neujahrsbrezeln aufgeteilt. Jede Portion wird zu einer dicken, langen Rolle mit dünneren Enden geformt. Die Enden werden in typischer Brezelform übereinander gekreuzt. Traditionell besitzt die typische Neujahrsbrezel einen Zopf am unteren, dicken Ende. Dazu teilt man vorher eine kleine Teigmenge ab, aus der man den Zopf flechtet, den man fest auf die Brezel drückt.

Vor dem Backen sollten die Neujahrsbrezeln auf dem mit Backpapier ausgelegten Backblech abermals gehen. Tipp: Zusammengeknüllte Alufolie in den Öffnungen verhindert, dass diese sich nicht schließen.
Das Eigelb wird mit etwas Milch oder Wasser gemischt und auf die Brezeln aufgetragen, bevor sie in den Ofen wandern.
Im auf 200 Grad vorgeheizten Backofen beträgt die Backzeit für die Neujahrsbrezel etwa 25 bis 30 Minuten.
