Teig:

140 g Mehl
30 g Stärke
40 g Kakaopulver, ungesüßt
½ Pck. (1 TL) Backpulver
80 g vegane Zartbitter-Schokostreusel oder kleingehackte vegane Zartbitter-Schokolade 
50 g Zucker
40 g Rohrzucker, gerne auch Vollrohrzucker
1 Pck. oder 10 g Vanillezucker
¼ TL Salz
140 g Zucchini
180 ml Pflanzenmilch (Soja-/Reis-/Hafer-/Dinkel-/Mandelmilch, bei dem Rezept auch gerne Kokosmilch, für die sojafreie Version natürlich keine Sojamilch nehmen)
120 ml geschmacksneutrales Öl (z.B. Sonnenblumenöl oder helles Rapsöl)


Frosting:

120 g weiche Pflanzenmargarine
60 g Kakaopulver, ungesüßt
200 g Puderzucker
1 TL Vanille-Extrakt (für die halal-Version durch Wasser ersetzen)
1 EL heißes Wasser (nicht kochend, sondern wasserhahnheiß)

Außerdem:
Streusel nach Belieben

Zubereitung

1. Ofen auf 175ºC Ober-/Unterhitze vorheizen.

2. Zucchini mit der Küchenreibe raspeln.

3. Mehl, Stärke, Kakaopulver und Backpulver in eine Rührschüssel sieben.

4. Schoko-Streusel, Zucker, Rohrzucker, Vanillezucker und Salz dazu geben und mit dem Schneebesen vermischen.

5. Die geriebene Zucchini, Pflanzenmilch und Öl dazu geben und mit dem Schneebesen nur so lange verrühren, bis alle Zutaten sich verbunden haben.

6. Den Teig gleichmäßig auf die Muffinförmchen verteilen und im Ofen auf mittlerer Schiene 20 bis 25 Minuten backen.
