340 ml trockener Sekt
170 g Weichweizen-Grieß
Mark einer Vanilleschote
100 g Zucker
2 Eier
20 g Butter
4 Eiweiß
1 Prise Salz
Fett für die Förmchen
Paniermehl für die Förmchen
Für die Sauce:
300 g Himbeeren TK
80 g Zucker
2 EL Limettensaft
10 EL trockener Sekt

Zubereitung

340 ml Wasser und den Sekt aufkochen, Grieß und Vanillemark unterrühren, ca. 10-15 Minuten bei schwacher Hitze ausquellen und abkühlen lassen.

Zucker, Eier und Butter untermischen.

Eiweiß mit Salz steif schlagen und vorsichtig unter die Grießmasse heben.

In gefettete und mit Paniermehl ausgestreute Förmchen geben und im vorgeheizten Ofen bei 180º C (Gas Stufe 3) ca. 25 Minuten backen.

Himbeeren erhitzen, mit Zucker und Limettensaft vermischen, pürieren, durch ein Sieb streichen und mit Sekt verfeinern.

Grießtörtchen kurz abkühlen lassen, stürzen, mit der lauwarmen Himbeersauce servieren.
