Grießklößchen oder „Nockerl“, wie sie im Süddeutschen Sprachraum heißen, sind eine zu Unrecht in Vergessenheit geratene Einlage für Suppen oder Brühen – wobei man sie auch als Hauptgericht zubereiten und z.B. überbacken servieren kann.

Zubereitung

1. Die Milch in einen Topf geben, Butter, Salz und Muskatnuss hinzufügen. Die Milch zum Kochen bringen und vom Herd nehmen.
2. Den Grieß in einem Schwung zur Milch geben und mit einem Kochlöffel so lange verrühren bis sich eine feste Masse gebildet hat. Die Masse anschließend abkühlen lassen.
3. Die Masse in eine Schüssel geben und das Ei unterrühren. Dazu kann auch der elektrische Handrührer verwendet werden.
4. Die Klößchen mit 2 Esslöffeln abstechen und direkt in die leicht kochende Suppe oder Brühe geben. Wenn die Klößchen an der Oberfläche schwimmen sind sie gar.

Tipp
Tauche die Löffel vor dem Abstechen der Nocken immer erst einmal in kaltes Wasser.
