Zubereitung

Ein Muffinblech mit 12 Mulden oder 12 Muffinförmchen aus Papier

1. Den Backofen auf 160 °C Umluft vorheizen. Das Muffinförmchen in das Blech stellen.
2. Den Zucker, den Vanillezucker, die Eier und die Prise Salz mit den Rührbesen des Handrührgerätes mehrere Minuten schaumig schlagen, bis sich der Zucker gelöst hat. Anschließend das Öl unterrühren.
3. Das Mehl mit dem Backpulver mischen und portionsweise unterrühren. Die Milch nach und nach hinzufügen und unterrühren.
4. Den Teig in eine Spritztülle füllen und die Muffinförmchen zu 2/3 mit Teig füllen. Für etwa 25 Minuten backen.

Tipp
Sie können diesen Teig mit Nüssen, Rosinen, geriebener Zitronenschale,  Zimt oder mit anderen Gewürzen abwandeln.

Für den traditionellen Muffins-Teig verwendet man Pflanzenöl und Vollkornmehl, aber auch jede andere Rührteigmischung lässt sich problemlos in den kleinen Papierförmchen ausbacken.
