Zubereitung

Als kleine Überraschung nicht nur an Silvester und Neujahr sind Glückskekse unschlagbar und bringen eine Menge Spaß. Noch lustiger wird es mit Pechkeksen.
Vorteil beim Selberbacken: Man kann die Glückskekssprüche selber schreiben und sogar auf seinen Freundeskreis abstimmen.
Beim Backen der Glückskekse ist ein wenig Zeit und Feingefühl gefragt. Zunächst wird das Eiweiß schaumig geschlagen und dann werden alle Zutaten miteinander verrührt. Das Mehl fügt man zuletzt hinzu. Danach ist eine Ruhezeit von einer Stunde erforderlich, in der der Teig für die Glückskekse quellen kann. In dieser Zeit kann man Sprüche heraussuchen und auf kleine Papierstreifen schreiben – oder am Computer auf ein Blatt ausdrucken und das Blatt dann in Streifen schneiden.
Um möglichst gleichmäßig runde Glückskekse zu erhalten, nimmt man am besten eine Schablone aus Pappe, in deren Kreisausschnitt man den Teig gibt. Ein Durchmesser von ungefähr 9 Zentimetern ist ideal. Als Unterlage gehört natürlich Backpapier aufs Blech, damit sich die Kekse nach dem Backen leicht lösen lassen.
Der Backofen sollte nicht allzu heiß sein. 160 Grad oder bei Umluft 140 Grad reichen für die zarten Glückskekse aus. Im vorgeheizten Ofen beträgt die Backzeit etwa 6 bis 8 Minuten. Wenn die Ränder eine goldgelbe Farbe annehmen, sind die Kekse fertig und sollten sofort vorsichtig vom Blech genommen und in Sekundenschnelle in Form gebracht werden. Eile ist hier wirklich wichtig, weil die Glückskekse sich nur ganz kurz nach dem Backen biegen lassen. Deshalb sollte man auch immer nur 2 oder 3 Kekse in einem Rutsch backen.
Den Zettel mit dem Spruch legt man in die Mitte, klappt den Teig einmal locker zusammen und biegt beim halbkreisformigen Glückskeks die Enden zusammen. Damit die Form hält, kann man den Glückskeks in eine Tasse oder ein Glas legen, bis er vollständig abgekühlt und erstarrt ist. Am besten legt man die Enden auf den Glasrand und drückt den mittleren Teil nach unten.
Wichtig ist, dass man die Glückskekse luftdicht aufbewahrt, damit sie nicht feucht werden.

Und Pechkekse bäckt man fast genauso wie chinesische Glückskekse: Dem Teig fügt man vor dem Backen noch etwas schwarze Lebensmittelfarbe hinzu. Die Sprüche für die Pechkekse dürfen gerne frech und provokant sein.
