Zubereitung

Zutaten:
200 g Haferflocken, am besten die kernigen
2 mittelgroße Eier
1 Prise Salz
100 g Puderzucker
5 Tropfen Aroma, (Bittermandelaroma)
etwas geriebene Zitronenschale von Biofrüchten

Die Haferflocken in einer Pfanne auf kleinster Stufe hellbraun anrösten.
Die Eier mit dem Zucker ca. 5 Minuten stark schaumig rühren.
Dann die Haferflocken unterrühren, bis eine feste Masse entsteht.
Den Teig mit dem Bittermandelaroma, der Zitronenschale und der Prise Salz würzen.
Ein Backblech mit Backpapier auslegen und mit einem Teelöffel kleine Teighäufchen auf das Blech setzen.
Zwischen den Häufchen ca. 3-4 cm Platz lassen, da die Plätzchen leicht auseinander gehen werden.
Das Blech in den vorgeheizten Backofen geben und bei 175 Grad Ober/Unterhitze gute 12-15 Min. auf der mittleren Schiene backen.
Wenn die Plätzchen leicht bräunlich aussehen sind sie perfekt.
Die Plätzchen auf dem Blech auskühlen lassen, damit sie nicht brechen, da sie direkt nach dem Backen noch sehr weich sind.
