150 g Zartbitter-Kuvertüre
250 g weiche Butter
450 g Weizenmehl Type 405
125 g Amarettinikekse
175 g Zucker
1 Päckchen Vanillezucker
1 Prise Salz
4 Tropfen Bittermandelöl
6 Eier
80 g gehackte Mandeln
1 Backpulver
225 ml Milch
2 EL Kakaopulver
5 EL Amaretto
Zur Dekoration:
2 EL Hagelzucker
Mandelblättchen

Zubereitung

Kuvertüre grob hacken und im heißen Wasserbad schmelzen.

Elektro-Backofen auf 175 Grad vorheizen.

Gugelhupf-Springform (26 cm Durchmesser) einfetten und mit etwas Mehl bestäuben.

Amarettinikekse grob zerbröseln.

Restliche Butter, Zucker, Vanillezucker, Salz und Bittermandelöl cremig rühren. Eier einzeln unterrühren.

Restliches Mehl, Mandeln und Backpulver mischen und 125 ml Milch nach und nach unterrühren.

Teig dritteln und Kakao, drei Esslöffel flüssige Kuvertüre und restliche Milch unter ein Drittel rühren, Amarettini und Amaretto unter ein zweites Drittel rühren.

Nacheinander dunklen, hellen und Amarettoteig in die Form füllen, mit einer Gabel spiralförmig durchziehen, glatt streichen und ca. 75 min backen (Elektro- und Erdgasbackofen: 175 Grad/Stufe 3, Umluft: 155 Grad). Kuchen stürzen und gut auskühlen lassen. Restliche Kuvertüre nochmals im Wasserbad erwärmen und auf dem Kuchen verteilen. Mit Hagelzucker und Mandelblättchen bestreuen und Guss gut trocknen lassen.
