Zubereitung

Für den Teig 6 Eier vom Eigelb trennen. Folgend wird Butter schaumig gerührt und nach und nach Zucker, Vanillezucker, 6 Eigelb, Rum und 3 ganze Eier eingerührt. Die gesamte Masse wird nun Schaumig geschlagen.

Folgend wird die Mehlmischung für den Baumkuchen vermengt. Hierfür nehmen wir das Mehl, Stärke und das Backpulver. Die fertige Mehlmischung wird esslöffelweise unter den Teig gehoben.

Die übrigen 6 Eiweiße in einer Schüssel steifschlagen und dabei Salz untermischen. Das Resultat wird nun auch wieder unter den Teig gehoben.

Nun können wir, schichtweise, beginnen den Baumkuchenteig in eine Backform zu packen. Wie beim Baumkuchen üblich, wird Schicht für Schicht im Backofen gebacken. Die nötige Hitze unterscheidet sich natürlich von Backofen zu Backofen. 1-2 Minuten pro Schicht sollten hierbei genügen.

Die Marmelade vorsichtig erwärmen, durch ein Sieb streichen und dann den Tortenrand mit dieser bestreichen. Das Ganze ca. 25-35 Minuten trocknen lassen.

Zuletzt die dunkle Kuvertüre zusammen mit Plattenfett schmelzen lassen und dann den Kuchen mit der fertigen Masse bestreichen.

Danach den Kuchen nochmals trocknen, bzw. abkühlen lassen und
et voilá - fertig ist der Baumkuchen!
