Für den Teig

  • 150 g Hartweizen-Grieß
  • 100 g Weizenmehl Type 550
  • 2 TL Backpulver
  • 150 g Magerquark
  • 70 g Zucker
  • 1 EL Vanillezucker
  • 1 Prise Salz
  • 6 EL Speiseöl
  • Mehl für die Arbeitsfläche
  • Fett für die Form
     

Für den Belag

  • 3 EL Preiselbeeren
  • 500 g Birnen
  • 2 EL Ahornsirup
  • 45 g Puderzucker
  • 1 EL Speisestärke
  • 2 Eier
  • 100 g Sahne
  • 1 Prise gemahlener Ingwer
  • 2 EL Creme fraiche
  • 2 EL Weichweizen-Grieß
  • 2 EL Zucker
  • 12 Walnusshälften

Zubereitung

Für den Teig Grieß, Mehl und Backpulver, Quark, Zucker, Vanillezucker, Salz und Öl zu einem glatten Teig verkneten.

Teig auf einer bemehlten Arbeitsfläche rund ausrollen, in eine gefettete Springform (Durchmesser 24 cm) legen und einen Rand hochziehen.

Elektrobackofen auf 180 Grad vorheizen.

Für den Belag Boden mit 1 1/2 Esslöffel Preiselbeeren bestreichen. Birnen schälen, vierteln und Kerngehäuse entfernen. Birnenviertel mit Ahornsirup in einer Pfanne kurz erwärmen und abtropfen lassen. Birnenviertel auf den Teig setzen und mit restlichen Preiselbeeren bestreichen.

Puderzucker mit Stärke, Eiern, Sahne, Ingwer, Creme fraiche und Grieß verrühren.

Guss über die Birnen geben und ca. 50 Minuten backen (Elektro- und Erdgasbackofen 180 Grad/Stufe 8, Umluft 160 Grad). Zucker in einer Pfanne erhitzen, Wallnusshälften darin karamellisieren lassen und Kuchen damit garnieren.
