Zubereitung

  1. Erst heizen wir den Backofen vor (Ober-/Unterhitze 175° C / Umluft 150° C / Gas: ca. Stufe 2) und waschen, schälen und reiben die Möhrchen ganz fein. Darüber kommen dann 2 TL Zitronensaft.
     
  2. Butter, Zucker und Vanillin werden schaumig geschlagen und dann nacheinander die 3 Eier untergerührt.
     
  3. Mischt das Mehl, Backin und Mandeln und gebt das unter ständigem Rühren in die Buttermasse.
     
  4. Nun noch die Möhrenraspeln darunter heben und ab in 12 Muffinförmchen.
     
  5. Das ganze darf jetzt für ca. 25 Minuten in den Ofen und dann in Ruhe abkühlen.
     

Und die Deko:

  1. Frischkäse, Mascarpone und Puderzucker werden in einer Schüssel schaumig geschlagen.
     
  2. Dann gebt ihr das Topping mit einer schmalen Sterntülle auf den Cupcake und verteilt ganz viele der Sterne auf dem Cupcake.
     
  3. Wir lackieren danach den Tuff mit dem Samtspray in Möhrchenfarben Orange und Grün und geben die Rüebli-Schildchen, sowie die Marzipan Rüebli darauf.
