Für den Mürbeteig:
70 g Butter
50 g Puderzucker
150 g mehl für Mürbe & Plätzchenteig
1 TL Backpulver
1 Eigelb
Mehl zum Ausrollen

Für die Füllung:
2 Päckchen Vanillepuddingpulver à 40 g
1/2 L Milch
200 g Zucker
2 EL Speisestärke
2 Eigelbe
1 Dose Pfirsiche = 840 g
2 Becher Schmand à 250 ml

Zubereitung

Mehl und Backpulver sieben und mit Butter, Puderzucker, Mehl, Backpulver und Eigelb zu einem glatten Teig verkneten und ca. eine Stunde kühl stellen.

Den Teig auf einer bemehlten Arbeitsfläche ausrollen, eine gefettete Springform (Durchmesser 26 cm) damit auskleiden und einen kleinen Rand hoch ziehen.

Für die Füllung zwei Päckchen Puddingpulver in etwas Milch anrühren, die restliche Milch mit Zucker aufkochen, das angerührte Puddingpulver dazugeben, nochmals aufkochen und etwas auskühlen lassen.

Speisestäke in den Eigelben anrühren, zu dem Pudding geben und verrühren.

Pfirsiche abtropfen lassen, würfeln und mit dem Schmand unter den Pudding ziehen.

Die Pudding-Creme auf dem Teig verteilen, im vorgeheizten Backofen bei 180 Grad (Gas Stufe 3) ca. 70 Minuten backen und ca. zwei Stunde kühl stellen.

 

Nach Wunsch die Tarte mit Puderzucker bestäubt servieren.
