  • 150 g weiche Butter
  • 140 g Zucker
  • 2 Eier
  • 1 Prise Salz
  • 0,5 TL frische Orangeschale (unbehandelt)
  • 200 g Weizenmehl (Type 405)
  • 40 g gemahlene Mandeln
  • 20 g Kakaopulver
  • 2 TL Backpulver
  • 150 ml Milch (oder z. B. Reis-Kokos-Drink)
  • 250 ml Milch
  • 0,5 Packung Vanillepuddingpulver
  • 50 g Zucker
  • 100 g weiche Butter
  • 2 EL Sahnefrischkäse
  • Lebensmittelfarbe, Zuckerperlen etc.

Zubereitung

Den Backofen auf 175 °C Umluft vorheizen und das Muffinblech mit Papierförmchen auslegen.

Für den Teig die weiche Butter mit dem Zucker und der Prise Salz mit dem Handrührgerät schaumig schlagen. Die Eier einzeln unterrühren bis eine cremige Konsistenz entstanden ist (ca. 4 – 5 Minuten).

Mehl, Backpulver, Kakaopulver und gemahlenen Mandeln mischen. Im Wechsel mit der Milch zur Eiermasse geben und unterrühren. Zum Schluss die Orangenschale dazugeben. Den Teig auf die Muffinförmchen verteilen und die Muffins in 20 – 25 Minuten im vorgeheizten Backofen backen. Danach auf einem Kuchengitter vollständig auskühlen lassen.

In der Zwischenzeit für das Frosting aus Milch, Zucker und Puddingpulver nach Packungsanweisung einen Pudding kochen. Diesen in eine Schüssel umfüllen und abkühlen lassen. Damit sich keine Haut bildet, entweder etwas Zucker darauf streuen oder gut mit Klarsichtfolie abdecken.

Nun die zimmerwarme Butter mit dem Handrührgerät aufschlagen. Den abgekühlten Pudding sowie den Frischkäse löffelweise unterrühren. Nun kann nach Belieben mit Lebensmittelfarbe eingefärbt werden. Die fertige Creme für mindestens 30 Minuten kühl stellen. Dadurch erhält diese die gewünschte Festigkeit.

Zur Fertigstellung das Frosting in einen Spritzbeutel mit Sterntüllen-Aufsatz füllen und rosettenartig auf den ausgekühlten Muffin spritzen. Nun kann nach Herzenslust mit Zuckerperlen etc. verziert werden.


Tipp: Karnevalsmasken aus mit Lebensmittelfarbe gefärbtem Marzipan oder Fondant ausschneiden und mit Zuckerperlen, -sternchen etc. verzieren. Die Cupcakes damit dekorieren.
