2 Zwiebeln
2 Knoblauchzehen
2 rote Paprikaschoten
2 Möhren
2 Fleischtomaten
2 EL Olivenöl
150 g Hartweizen-Grieß
400 ml Gemüsebrühe
2 EL geröstete Pinienkerne
2 EL gehackte Petersilie
Salz
Pfeffer
400 g passierte Tomaten
Cayennepfeffer
1/2 TL Currypulver
Zucker
100 g geriebener Käse

Zubereitung

Zwiebeln und Knoblauch abziehen und fein würfeln. Paprika waschen, halbieren und entkernen.

Möhren schälen, Tomaten häuten, entkernen und beides würfeln. Öl in einer Pfanne erhitzen, Zwiebeln und Knoblauch darin anbraten, Möhren und Grieß zufügen und unter Rühren kurz anbraten. Mit Brühe ablöschen und ca. 10 Minuten bei geringer Hitze quellen lassen. Tomatenwürfel, Pinienkerne und Petersilie unterheben und alles mit Salz und Pfeffer abschmecken.
Elektrobackofen auf 200 Grad vorheizen. Paprikahälften mit der Grieß;-Gemüse-Mischung füllen und in eine flache Auflaufform setzen.

Passierte Tomaten mit Salz, Pfeffer, Cayennepfeffer, Curry und Zucker abschmecken. Sauce um die Paprikaschoten verteilen.
Paprikaschoten mit Käse bestreuen und ca. 40 Minuten überbacken (Elektro- und Erdgasbackofen 200 Grad/Stufe 4, Umluft 180 Grad).

Gefüllte Paprika auf einem Saucenspiegel servieren.
