Für den Teig:

  • 500 g Spätzlemehl Type 405
  • 25 g gemischte, gehackte Wildkräuter
  • 3 Eier
  • Salz
  • 100 ml Wasser

Für die Sauce:

  • 1 Zwiebel
  • 3 EL Butter
  • 200 ml Milch
  • 200 g Weichkäse mit Blauschimmel
  • Pfeffer

 

 

1 Esslöffel Mehl beiseite stellen, restliches Mehl in eine Schüssel geben, mit Kräutern, Eiern, 1/2 Teelöffel Salz und Wasser verrühren. Den Teig ca. 15 Minuten ruhen lassen. Danach den Teig entweder von einem Brett schaben oder mit einer Spätzlepresse in kochendes Salzwasser drücken. Sobald die Spätzle an die Oberfläche kommen, mit einem Schaumlöffel herausnehmen, gut abtropfen lassen und warm stellen. Für die Sauce Zwiebel abziehen und fein hacken. 1 Esslöffel Butter erhitzen und Zwiebeln darin glasig dünsten. Restliches Mehl darüber stäuben, leicht bräunen und unter ständigem Rühren Milch angießen. Weichkäse zerkleinern, zugeben, unter Rühren schmelzen lassen und die Sauce mit Salz und Pfeffer abschmecken. Spätzle in der restlichen Butter schwenken und mit der Sauce servieren.
