350 ml Milch
1/2 TL Salz
1 Prise Muskat gemahlen
150 g Hartweizen-Grieß
2 Tomaten
1 Zucchini
2 Frühlingszwiebeln
1 Zwiebel
1 Knoblauchzehe
6 EL Speiseöl
400 g Hackfleisch
2 EL Tomatenmark
250 ml Tomatensaft
1 Dose Mais = 340 g
Cayennepfeffer
Kreuzkümmel

Zubereitung

Eier mit Milch verrühren, mit Salz und Muskat würzen, Grieß einrieseln und den Teig ca. 30 Minuten ruhen lassen.
Tomaten kreuzweise einritzen, mit kochendem Wasser überbrühen, häuten, Kerne und Stielansatz entfernen und das Fruchtfleisch würfeln. Zucchini waschen, putzen und in kleine Würfel schneiden. Frühlingszwiebeln putzen, waschen und in Ringe schneiden.
Zwiebel und Knoblauchzehe abziehen, fein würfeln, in etwas erhitztem Öl andünsten, Hackfleisch zugeben und krümelig anbraten. Tomaten- und Zucchiniwürfel, Tomatenmark sowie Tomatensaft hinzufügen und alles ca. fünf Minuten garen.
Mais abtropfen lassen und zusammen mit den Frühlingszwiebeln dazugeben. Pfanne mit Salz, Cayennepfeffer und Kreuzkümmel abschmecken und warm stellen.
Für die Pfannkuchen restliches & Öl in einer Pfanne erhitzen, den Teig gut durchrühren und nach und nach zu goldbraunen Pfannkuchen abbacken.
Füllung auf den Pfannkuchen verteilen, zusammenklappen und nach Wunsch mit gehackter Petersilie bestreut servieren.
