Für den Teig:

  • 200 g Weizenmehl, Type 405
  • 1 Prise Salz
  • 100 ml lauwarmes Wasser
  • 3 EL Walnussöl
  • etwas Öl zum Bestreichen


Für die Füllung:

  • 500 g frischer Spinat
  • 1 EL Olivenöl
  • 1 Knoblauchzehe, fein gehackt
  • Salz & Pfeffer
  • 250 g Schafskäse, gewürfelt
  • 1 Ei, Größe M, getrennt
     

Frischhaltefolie, Backpapier

Zubereitung

  1.  Das Mehl mit einer Prise Salz, Wasser und Öl in eine Schüssel geben und mit den Knethaken des elektrischen Handrührers ca. 10 Minuten glatt verkneten.
     
  2. Den Teig aus der Schüssel nehmen und auf einer bemehlten Arbeitsfläche von Hand kurz durchkneten. Der Teig soll sich elastisch anfühlen. Aus dem Teig eine Kugel formen, in eine Schüssel legen, die Oberfläche mit etwas Öl bestreichen, mit Frischhaltefolie abdecken und ca. 1 Stunde ruhen lassen.
     
  3. Inzwischen den Spinat gut waschen und in kochendem Wasser kurz blanchieren, anschließend abtropfen lassen.
     
  4. Das Olivenöl in einer Pfanne erhitzen, den Knoblauch und den Spinat darin andünsten. Mit Salz und Pfeffer würzen, von der Kochstelle nehmen und die Schafskäsewürfel unterrühren. Etwas abkühlen lassen.
     
  5. Ein Backblech mit Backpapier belegen und den Backofen auf 170 °C Umluft vorheizen.
     
  6. Das Öl mit Küchenpapier von der Teigkugel abtupfen. Ein Geschirrtuch auf der Arbeitsfläche ausbreiten und etwas bemehlen.
     
  7. Den Teig auf dem Tuch zunächst mit den Händen flach drücken und dann von der Mitte nach außen dünn ausrollen. Zwischendurch den Teig hochheben, umdrehen und etwas bemehlen.
     
  8. Den Teig mit beiden Händen hochheben und vorsichtig über die Handrücken ziehen. Den Teig wieder auf das Tuch legen, an den Seiten gerade ziehen.
     
  9. Die Spinatmischung auf dem Teig verteilen, die Ränder großzügig frei lassen. Die Teigränder mit Eiweiß bestreichen und den Teig aufrollen. Die Enden gut verschließen. Die Rolle mit der Naht nach unten auf das Backblech legen und dann mit dem Eigelb bestreichen. Oben ein paar Schlitze in den Teig stechen.
     
  10. Auf der mittleren Schiene ca. 30 Minuten goldbraun backen.

Tipp: Dazu passt ein Dip aus Joghurt und saurer Sahne.
