500 g  Weizenmehl Type 405
1 TL Salz
2 EL Olivenöl
450 g frischer Spinat
50 g frische Kräuter z.B. Borretsch, Petersilie, Thymian und Minze
1 Zwiebel
1 Knoblauchzehe
500 g Ricotta
100 ml Milch
80 g geriebenen Parmesan
Pfeffer

Zubereitung

Mehl, Salz und Olivenöl mit 1/4 Liter Wasser zu einem festen Teig verkneten, in zehn Teile aufteilen, je eine Kugel formen und mit einem feuchten Tuch abdecken. Spinat und Kräuter putzen, waschen, trocken tupfen und sehr fein hacken. Zwiebel und Knoblauch abziehen, fein würfeln und mit Ricotta, Milch, Parmesan, Spinat und Kräutern vermischen. Masse mit Salz und Pfeffer würzen.

Elektro-Backofen auf 200 Grad vorheizen.

Eine Springform (28 cm Durchmesser) einölen. Eine Teigkugel in der Größe der Springform ausrollen, die Form damit auslegen, den Rand hochziehen und den Teig mit Öl bestreichen.

Weitere vier Platten ausrollen, einölen und nacheinander in die Form legen. Ricottamasse darauf verteilen, sechs Mulden hinein drücken, je ein Ei aufschlagen und in die Mulde geben. Restliche Teigplatten ausrollen, ölen und einschichten. Die Oberfläche mit einer Nadel mehrmals einstechen.

Torte im Ofen ca. 60 Minuten goldbraun backen (Elektro- und Erdgasbackofen: 200 Grad/Stufe 4, Umluft: 180 Grad).
