190 g Weizenmehl Type 550
1 TL Backpulver
600 g Magerquark
1 Prise Salz
4 EL Speiseöl
1 Eigelb
140 g Zucker
Mehl zum Ausrollen
Fett für die Form
2 Eier
2 EL Vanillezucker
80 ml Sahne
30 g Weichweizen-Grieß
2 TL Speisestärke
1 EL Zitronensaft
500 g frische gemischte Beeren
1 Päckchen klarer Tortenguss
250 ml Apfelsaft

Zubereitung

Für den Teig Mehl mit Backpulver vermischen, mit 100 g Quark, Salz, Öl, Eigelb und 40 g Zucker verkneten und ca. 30 Minuten kühl stellen.

Teig auf einer bemehlten Arbeitsfläche ausrollen, eine kleine gefettete Springform (20 cm Durchmesser) damit auslegen und den Rand hochziehen.

Für die Füllung Eier, trennen, Eigelb mit restlichem Zucker und einem Esslöffel Vanillezucker schaumig rühren. Sahne, Grieß, Speisestärke, restlichen Quark und Zitronensaft unterrühren. Eiweiß steif schlagen, unterheben und Masse auf dem Boden verteilen.

Kuchen ca. 50 Minuten backen und noch 10 Minuten im ausgeschalteten Ofen stehen lassen (Elektro- und Erdgasbackofen: 180 Grad/Stufe 3, Umluft: 160 Grad). ,

Für den Belag die Beeren putzen, waschen, trocken tupfen und evtl. klein schneiden. Den abgekühlten Kuchen mit Beeren belegen, Tortenguss nach Packungsanweisung mit Apfelsaft und restlichem Vanillezucker zubereiten, auf den Beeren verteilen und abkühlen lassen.

Torte nach Wunsch mit Zitronenmelisse verziert servieren. Dazu schmeckt eine leckere Pistaziensahne.
