Für den Teig:
5 Eier
175 g Zucker
1/2 Fläschen Vanille-Aroma
2 EL Weinbrand
200 g Weizenmehl Type 405
2 TL Backpulver
Für die Füllung:
3 Blatt Gelatine
1/8 Liter Kirschsaft
600 g gemischte Beeren TK
5 EL Zucker
20 g Bourbon-Vanillepuddingpulver
2 EL Kirschwasser
3 Becher Sahne à 250 g
3 Päckchen Sahnesteif
50 g Pistazienkerne

Zubereitung

Elektro-Backofen auf 180 Grad vorheizen.

Eier mit Zucker, Vanille-Aroma, Weinbrand und fünf Esslöffeln heißem Wasser ca. fünf Minuten schaumig schlagen. Mehl und Backpulver vermischen, nach und nach unterrühren.

Eine Springform (26 cm Durchmesser) mit Backpapier auslegen, Teig einfüllen und ca. 25-30 Minuten backen (Elektro- und Erdgasbackofen: 180 Grad/Stufe 3, Umluft 160 Grad). Boden auskühlen lassen, zweimal quer durchschneiden, einen Boden auf eine Platte legen und mit einem Tortenring umstellen.

Gelatine nach Packungsanweisung einweichen. Kirschsaft aufkochen, Beeren und drei Esslöffel Zucker zugeben. Bourbon-Vanillepuddingpulver mit Kirschwasser anrühren, dazugeben, aufkochen, tropfnasse Gelatine unterrühren und die Masse abkühlen lassen.

Sahne mit Sahnesteif und restlichem Zucker steif schlagen. Pistazien fein hacken, die Hälfte davon unter die Hälfte der Sahne heben. Boden mit der Hälfte der Beeren bedecken, die Hälfte der Pistaziensahne darauf verteilen und den zweiten Boden auflegen. Den Vorgang noch einmal wiederholen, mit dem dritten Boden abdecken und ca. eine Stunde kühl stellen.

Tortenring entfernen, Torte mit der restlichen Sahne bestreichen und mit restlichen Pistazien und nach Wunsch mit frischen Beeren dekorieren.
