Für den Teig:

  • 4 Eier
  • 125 g Zucker
  • 3 EL kaltes Wasser
  • 125 g Dinkelmehl Type 630
  • 1 TL Backpulver
  • 100 g Schokoladenraspel

Für den Belag:

  • 750 g Erdbeeren
  • 6 EL Zucker
  • 800 g Sahne
  • 3 Päckchen Sahnesteif
  • 4 Blatt Gelatine
  • 200 g Frischkäse
  • 200 g Kuvertüre

Zubereitung

Elektrobackofen auf 180 Grad vorheizen.

Eier trennen und Eiweiß steif schlagen. Eigelb mit Zucker und Wasser cremig-schaumig aufschlagen, Mehl und Backpulver mischen und zusammen mit Raspelschokolade untermischen. Eischnee vorsichtig unterheben und Teig in eine mit Backpapier ausgelegte Springform (Durchmesser ca. 26 cm) füllen. Kuchen im vorgeheizten Backofen (Elektro- und Erdgasbackofen: 180 Grad/Stufe 3, Umluft: 160 Grad) ca. 20-25 Minuten backen.

Biskuit aus der Form lösen, auf einem Kuchengitter erkalten lassen und waagerecht halbieren.

Für den Belag Erdbeeren waschen und putzen, 500 g Früchte klein schneiden, auf dem Kuchenboden verteilen, den Rest mit 2 Esslöffeln Zucker pürieren. Sahne mit restlichem Zucker und Sahnesteif steif schlagen und Gelatine in kaltem Wasser einweichen. 1/3 Sahne abnehmen und auf die Erdbeeren streichen. Gelatine auflösen, unter das Erdbeerpüree ziehen und kaltstellen.

Wenn die Masse anfängt zu gelieren, Frischkäse und restliche Sahne untermischen. Eine Hälfte der Erdbeercreme auf der Sahne verteilen und Kuchendeckel aufsetzen. Torte mit restlicher Creme bestreichen und mindestens 3 Stunden kaltstellen.

Kuvertüre schmelzen und in eine Spritztülle mit kleiner Öffnung füllen.

Mit der Kuvertüre Herzformen in verschiedenen Größen auf Backpapier zeichnen und fest werden lassen. Torte vor dem Servieren mit den Schokoladen-Herzen und mit Minze garnieren.
