Für den Biskuit:

  • 3 Eier
  • 70 g Zucker
  • 2 EL kochendes Wasser
  • 1 Prise Salz
  • 95 g Weizenmehl Type 405
  • 20 g gehackte Mandeln
     

Für die Füllung:

  • 500 g Johannisbeeren
  • 3 Becher Sahne à 200 g
  • 100 g Zucker
  • 30 g Vanillezucker
  • 80 g Schokoladenraspel
  • 50 g gehackte Mandeln

Zubereitung

Elektro- und Erdgasbackofen auf 180 Grad vorheizen. Eier trennen, Eigelb mit Zucker und Wasser ca. fünf Minuten lang schaumig rühren. Eiweiß mit Salz steif schlagen und mit einem Schneebesen vorsichtig unter die Eigelbmasse ziehen. Mehl mit den Mandeln unterheben.

Den Boden einer kleinen Springform (20 cm Durchmesser) mit Backpapier auslegen, Teig einfüllen und ca. 25-30 Minuten goldbraun backen (Elektro- und Erdgasbackofen: 180 Grad/Stufe 3, Umluft 160 Grad).

Johannisbeeren waschen, einige Rispen zur Dekoration zur Seite stellen, restliche Beeren von den Rispen lösen, pürieren und evtl. durch ein feines Sieb streichen.

Den abgekühlten Boden einmal durchschneiden, einen Boden auf eine Kuchenplatte legen und mit einem Tortenring umschließen.

400 g Sahne mit 80 g Zucker steif schlagen, Johannisbeerpüree, Vanillezucker, Schokoraspel und Mandeln unterheben. 2/3 der Johannisbeersahne einfüllen den zweiten Boden auflegen und restliche Füllung darauf verteilen.

Torte ca. zwei Stunden gefrieren lassen. Gefrorene Torte aus der Form lösen. Restliche Sahne mit Zucker steif schlagen, Tortenrand damit bestreichen und nochmals eine Stunde ins Tiefkühlfach stellen. Vor dem Servieren ca. 15 Minuten im Kühlschrank antauen lassen und mit Johannisbeerrispen und Schokospänen verziert servieren.
 

Tipp: Die Torte lässt sich am besten mit einem elektrischen Messer schneiden.
