Für den Teig

  • 5 Eier
  • 200 g Puderzucker
  • 100 g Weizenmehl Type 405
  • 1 TL Backpulver
  • 50 g gemahlene Mandeln
     

Für die Füllung

  • 3 Dosen Mandarinen à 312 g
  • 9 EL Zucker
  • 2 Päckchen klarer Tortenguss
  • 600 g Sahne
  • 3 Päckchen Sahnesteif
  • 400 g Ricotta
  • 2 EL Karamellsirup

Zubereitung

Elektrobackofen auf 180 Grad vorheizen.

Eier trennen und Eiweiß steif schlagen. Eigelb mit Puderzucker cremig-schaumig aufschlagen. Mehl und Backpulver mischen und mit Mandeln unterrühren. Eischnee vorsichtig unterheben, Teig in eine mit Backpapier ausgelegte Springform (Durchmesser ca. 26 cm) füllen und im vorgeheizten Backofen (Elektro- und Erdgasbackofen: 180 Grad/Stufe 3, Umluft: 160 Grad) ca. 20-25 Minuten backen.

Kuchen aus der Form lösen, auf einem Kuchengitter erkalten lassen und zweimal waagerecht durchschneiden.

Für die Füllung Mandarinen abtropfen lassen und Saft dabei auffangen. Nach Packungsanweisung mit 2 Esslöffeln Zucker und Mandarinensaft einen Tortenguss herstellen. Einige Mandarinenspalten zum Garnieren beiseite legen, die anderen vorsichtig unterheben. Sahne mit 3 Esslöffeln Zucker und Sahnesteif steif schlagen. Ricotta mit Karamellsirup verrühren und 1/3 der Sahne untermischen. Mandarinenkompott auf dem Kuchenboden verteilen, zweiten Boden auflegen, diesen mit Ricotta-Creme bestreichen. Tortendeckel aufsetzen und Kuchen mit restlicher Sahne bestreichen.

Restlichen Zucker in einem Topf goldbraun karamellisieren lassen, damit Fäden auf Backpapier ziehen und fest werden lassen.

Torte mit restlichen Mandarinen und Karamellornamenten dekoriert servieren.
