120 g Zucker
50 g Butter
130 g Instantmehl Type 405
1 Msp. Backpulver
Zucker zum Bestreuen
2 kleine reife Mangos
1 reife Papaya
6 cl Pfirsichlikör
6 Blatt Gelatine
500 g Schlagsahne
2 Päckchen Vanillezucker
3 EL Limettengelee
30 g geröstete Mandelblättchen

Zubereitung

Eier trennen, Eigelb mit vier Esslöffeln Wasser und 80 g Zucker dickschaumig schlagen. Butter schmelzen und unterrühren. Eiweiß mit dem restlichen Zucker steif schlagen, auf die Eigelbcreme geben, Mehl und Backpulver vermischen, über den Eischnee sieben und vorsichtig unterheben.

Biskuitmasse auf ein mit Backpapier ausgelegtes Backblech streichen und ca. 15-17 Minuten im vorgeheiztem Backofen bei 180 Grad (Gas Stufe 3) backen.

Biskuitteig auf ein mit Zucker bestreutes Geschirrtuch stürzen und das Backpapier vorsichtig abziehen.

Mangos und Papaya schälen, Papaya halbieren, entkernen und fein würfeln. Mangofruchtfleisch in Spalten vom Stein lösen, einige Spalten für die Garnierung zur Seite stellen, die restlichen fein würfeln. Die Hälfte der Fruchtwürfel mit 4 cl Pfirsichlikör pürieren.

Gelatine einweichen, Sahne mit Vanillezucker steif schlagen und Fruchtmus unterrühren. Gelatine nach Packungsanweisung auflösen und unter die Mango-Papaya-Sahne rühren. Ein Drittel der Creme zur Garnierung abnehmen und bei Zimmertemperatur stehen lassen, die restliche Creme mit den restlichen Fruchtwürfeln vermischen, kühl stellen und angelieren lassen.

Die Biskuitplatte mit dem restlichen Likör beträufeln und mit erwärmtem Limetten-gelee bestreichen.

Die Mango-Papaya-Creme mit Fruchtstücken auf die Biskuitplatte streichen und in sechs Zentimeter dicke Streifen schneiden. Ersten Streifen zu einer Schnecke aufwickeln und senkrecht auf eine Tortenplatte setzen, den nächsten Streifen an das Ende des ersten setzen und als Schnecke herumwickeln. Mit den restlichen Biskuitteigstreifen ebenso verfahren.

Einen Tortenring um die Torte legen und ca. 2 Stunden kalt stellen. Torte mit der restlichen Creme bestreichen, den Rand mit Mandelblättchen bestreuen und mit Mangospalten garniert servieren.
