Für den Biskuit:

  • 5 Eier
  • 175 g Zucker
  • 1 Päckchen Vanillezucker
  • 1 Prise Salz
  • 200 g Weizenmehl Type 405
  • 1 TL Backpulver
  • Fett für die Form
  • 100 g Himbeerkonfitüre
     

Für die Creme:

  • 250 g Schmand
  • 1 Päckchen Orangenaroma
  • 600 ml Sahne
  • 2 Päckchen Sahnesteif
  • 2 kleine Dosen Mandarinen à 315 ml
     

Zum Verzieren:

  • 200 ml Sahne
  • 1 Päckchen Sahnesteif
  • 75 g Haselnusskrokant

Zubereitung

Elektro-Backofen auf 180 Grad vorheizen.

Eier, Zucker, Vanillezucker, Salz, sechs Esslöffel lauwarmes Wasser ca. sieben Minuten dickschaumig aufschlagen. Mehl mit Backpulver mischen und vorsichtig unterziehen.

Den Teig in eine gefettete Springform (Durchmesser 26 Zentimeter) füllen und ca. 25-30 Minuten backen. Biskuit auskühlen lassen, einmal waagerecht durchschneiden und den unteren Boden mit der erhitzten Himbeerkonfitüre bestreichen.

Für die Creme Schmand mit Orangenaroma vermischen, Sahne mit Sahnesteif steif schlagen und unterheben. Mandarinen abtropfen lassen und die Hälfte unter die Schmand-Masse ziehen.

Biskuitboden auf eine Tortenplatte setzen, einen Tortenring umlegen und die Hälfte der Schmand-Masse darauf streichen.

Den zweiten Boden darauf setzen, die restliche Masse einfüllen, glatt streichen und ca. zwei Stunden kühl stellen.
