Zutaten

Für die Baisermasse:

  • 5 Eiweiß
  • 1 Prise Salz
  • 250 g Zucker
  • 30 g Kakaopulver
  • 1 TL Speisestärke
     

Zum Belegen:

  • 400 g Sahne
  • 2 EL Vanillezucker
  • Himbeeren (TK oder frisch)
  • Physalis oder andere Früchte

Zubereitung

Baisermasse:

Eiweiß steif geschlagen und alle Zutaten unterrühren. Hierbei die Stärke mit dem Kakaopulver einrühren.

Die Baisermasse auf ein Packpapier streichen. Hierbei ist es hilfreich, wenn ihr einen Kreis auf das Backpapier zeichnet und es dann umdreht. Als Durchmesser eignen sich etwa 24 cm. Die Baisermasse muss schön zu einer "Torte" geformt werden, die etwa 3 cm hoch ist.

Im vorgeheizten Ofen bei 180°C backen bis er etwas Farbe angenommen hat (etwa 10-15 Minuten), dann den Ofen zurückschalten auf 130°C und den Baiser etwa 1 Stunde backen. Den Ofen abschalten und die Ofentür leicht öffnen. Den Baiser im Ofen komplett abkühlen lassen.
 

Belag:

Sahne mit Vanillezucker steif schlagen und auf dem getrockneten Baiser verteilen. Mit den Früchten dekorieren und am besten innerhalb von 2–4 Stunden verzehren. Mit der Zeit drücken Sahne und Früchte nämlich den Baiser ein, deswegen schmeckt diese Torte frisch am besten.
