Zubereitung

3 Eier trennen. Das Eiweiß mit einer Prise Salz steif schlagen. Eigelb mit 50g Zucker so lange schlagen, bis der Zucker sich aufgelöst hat. 175g Mehl mit 1 TL Backpulver und 2 EL Kakaopulver mischen und nach und nach hinzu geben.200 ml Milch hinzugeben und rühren. Kurz ruhen lassen.

Für die Füllung 500g Quark mit 1 Beutel gemahlene Gelatine 1 Minute auf höchster Stufe schlagen. 200g Vanillejogurt und 100g Zucker nach und nach hinzufügen und mindestens 2 Minuten schlagen. Erdbeeren(300g) putzen und trocken tupfen. In feine Würfel schneiden und unter die Masse heben.

In einer heißen Pfanne ca. aus der Teigmasse portionsweise 4-5 Pfannkuchen backen. Die fertigen Pfannkuchen auskühlen lassen.

Einen Pfannkuchen auf eine Kuchenplatte geben und mit der Quarkmasse bestreichen. Einen zweiten Pfannkuchen darauf geben und wieder Quarkmasse darauf geben. So fortfahren, bis man zum letzten Pfannkuchen gekommen ist. Diesen als letztes auf die Masse geben und mit dem Rest der Quarkmasse bestreichen.

150 g Erdbeeren putzen und trocken tupfen und halbieren. Auf dem Kuchen verteilen und mit den Schokoladenraspeln bestreuen.

Kuchen für mindestens 1 Stunde bis zum Verzehr kalt stellen.
