Zubereitung

Die Butter schmelzen und abkühlen lassen. Die Vanillekipferl fein zerstossen. Mehl, Instant-Kakao und Backpulver mischen. 5 Eier trennen. Eiweiss mit einer Priese Salz steif schlagen. 20 g Puderzucker mit der Speisestärke mischen, in den Eischnee einrieseln lassen und 2 Minuten weiterschlagen. Kalt stellen. Den Backofen auf 175 Grad (Umluft 150 Grad) vorheizen. Eigelb und den restlichen Puderzucker cremig rühren. Den Eischnee, die Kipferlbrösel und die Mandeln auf die EigelbCreme und vorsichtig unterheben. Die abgekühlte, aber noch flüssige Butter nach und nach unterrühren. Den Teig in eine mit Backpapier ausgelegte Springform (26 cm Durchmesser) geben und glatt streichen. Im Backofen etwa 40 Minuten backen. Den Kuchen aus der Form lösen und auf einem Gitter abkühlen lassen. Die Schokolade zerbröckeln und im heissen Wasserbad schmelzen. Abkühlen lassen. Die Sahne steif schlagen. Die restlichen Eier trennen. Eiweiss mit etwas Salz steif schlagen. Eigelb, Vanillezucker und LebKuchengewürz in eine Schüssel geben und im warmen Wasserbad cremig schlagen. Im kalten Wasserbad unter ständigem Rühren abkühlen lassen. Zuerst die abgekühlte, gerade noch flüssige Schokolade, dann die Sahne unter die Creme heben. Den Eischnee daraufgeben und vorsichtig unterziehen. Den Tortenboden dreimal waagerecht durchschneiden. Die Böden mit etwa zwei Dritteln der SchokoladenCreme bestreichen und wieder aufeinanderlegen. Die Torte mit der restlichen SchokoladenCreme bestreichen. Mit Kakaopulver bestäuben und mit einem Messerrücken die Oberfläche verzieren.
