250 g Weizenmehl Type 405
1 TL Backpulver
1 Prise Salz
120 g kalte Butter
150 g Zucker
3 Eier
1 Eigelb
1 Päckchen Vanillezucker
Fett für die Form
2 Päckchen Vanillepuddingpulver zum Kochen
250 ml Milch
750 ml Sahne
2 EL Amaretto-Likör
1 kg kleiner Äpfel
4 EL Mandelblättchen

Zubereitung

Mehl mit Backpulver und Salz mischen. Butter in Stückchen teilen, mit Mehlmischung, 95 g Zucker, ein Ei, Eigelb und Vanillezucker rasch zu einem glatten Teig verkneten.

Teig in Folie wickeln und ca. 30 Minuten im Kühlschrank ruhen lassen.

Springform (26 cm Durchmesser) einfetten, Teig dünn ausrollen, in die Form drücken und einen ca. 6 cm hohen Rand hochziehen.

Puddingpulver mit ca. 100 ml Milch und den restlichen Eiern verrühren. Restliche Milch und Zucker mit Sahne aufkochen und angerührtes Puddingpulver und Amaretto-Likör unterziehen, einmal aufkochen und etwas auskühlen lassen.

Elektro-Backofen auf 180 Grad vorheizen.

Äpfel schälen, das Kerngehäuse ausstechen, Äpfel halbieren und auf den Teigboden geben.

Pudding auf den Apfelhälften verteilen und den Kuchen auf der untersten Schiene ca. 60 Minuten goldgelb backen (Elektro- und Erdgasbackofen: 180 Grad / Stufe 3, Umluft: 160 Grad), evtl. nach der Hälfte der Zeit abdecken. Apfeltorte aus dem Ofen nehmen und in der Form mindestens drei Stunden auskühlen lassen. Mit Mandelblättchen garniert servieren.
