Für den Teig:
150 g Dinkelmehl Type 630
1/2 TL Backpulver
50 g Zucker
1 Päckchen Vanillezucker
1 Eigelb
100 g Butter
Mehl für die Arbeitsfläche
Fett für die Form
Für die Creme:
450 g Himbeeren alternativ TK
50 g Amarettinikekse
1/2 Päckchen Vanillepuddingpulver
60 g Zucker
250 ml Milch
300 g Magerquark
2 Tropfen Bittermandelöl
3 Blatt weiße Gelatine
250 g Sahne
Für die Dekoration:
20 Schokoladeneier
3 EL gemahlene Pistazien

Zubereitung

Mehl und Backpulver vermischen, in die Mitte eine Vertiefung schieben, Zucker Vanillezucker und Eigelb in die Vertiefung geben. Butter in kleinen Flocken auf dem Mehl verteilen, alles zu einem glatten Teig verkneten und ca. 30 Minuten kalt stellen.

Elektro-Backofen auf 200 Grad vorheizen.

Teig auf einer bemehlten Arbeitsfläche ausrollen, eine gefettete Springform (26 cm Durchmesser) damit auslegen und den Rand etwas hochziehen. Teig mit einer Gabel mehrmals einstechen, ca. zehn Minuten backen (Elektro- und Erdgasbackofen: 200 Grad/Stufe 4, Umluft: 180 Grad) und in der Form abkühlen lassen.

Himbeeren putzen, waschen und trocken tupfen.

Amarettinikekse zerbröseln und auf dem Boden verteilen.

Für die Creme den Pudding nach Packungsanweisung mit Zucker und Milch zubereiten, abkühlen lassen und mit Quark und Bittermandelöl verrühren.

Gelatine nach Packungsanweisung einweichen.

Himbeeren auf dem Boden verteilen. Sahne steif schlagen.

Gelatine auflösen, unter die Creme rühren, Sahne unterheben und auf den Himbeeren verteilen.

Torte ca. zwei Stunden kühl stellen. Schokoladeneier halbieren und um den Tortenrand verteilen. Torte mit Pistazien bestreuen und nach Wunsch mit Himbeeren, Schokoladeneiern und Marzipanblumen verzieren.
